Chef’s Handyman, Cauliflower Couscous Salad

Why not try couscous salad made with cauliflower? I ate a similar salad in Amsterdam and I was delighted. I’m a fan of couscous and middle Eastern food. So, cauliflower couscous might be a refreshing and light alternative for the summer barbecue, right? Please have a try.

Cauliflower Couscous Salad

For the salad, chop the cauliflower and place it into a large bowl. Add pomegranate seeds, 0.5 cups of cashews and pistachios, chopped apricots, raisins or dried cranberries, lemon rind, chopped peppermint and parsley. Combine all ingredients. Add 10 tbsp. of olive oil, 6 tbsp. of lemon juice and 8 tbsp. of orange juice. Season the salad to taste with chili flakes, salt, black pepper, turmeric powder and couscous spices. If necessary add more olive oil and or lemon juice.

Shopping list for the cauliflower couscous salad for 4 serves, 1 middle sized cauliflower, 0.5 cups cashews, 5-6 tbsp. pistachios, 2 lemons, olive oil, orange juice, salt, black pepper, turmeric powder, couscous spices, chili flakes, 1 bunch peppermint, 1 bunch parsley, 1 cup dried apricots, 1 hand full cranberries, 1 pomegranate.
