Chef’s Handyman, hearty vegetable soup

After a long walk through the cold and rainy countryside, a warm and hearty soup is more than welcome, right? Especially this vegetable soup is easy to prepare and enriched with different herbs a simple dish with an elegant touch. The Chef’s Handyman team members are real soup lovers and are fond of this type of dishes. 

Vegetable soup with herbs

For the soup, cut the vegetables into cubes. Heat 2 l or 4 lbs of vegetable stock in a large pan. Add the vegetable cubes and the herbs. Cook the soup on medium heat for 50 minutes or until the vegetables pieces are cooked through. Add a can of chickpeas and 1 small can of peas. Take 2-3 cups of the soup out and blend all ingredients. Pour the mixture back into the pan. Then season the soup to taste with salt, pepper and chili powder. 

Serve the soup in cups or soup plates. 

Shopping list for 4-6 serves, 6 potatoes, 2 leak stalks, 1 celery, 1 bell pepper, 20 green beans, 4 carrots, 1 bunch spring onions or onions, 1 bunch thyme, 1 bunch garden lovage, 1 bunch chives, 2x laurel leaves, 1 can chickpeas, 1 small can peas, salt, pepper, chili powder, 2-3 l or 4-6 lbs. vegetable stock.
