A master dish even for the small budget
Do you like cauliflower? Then this salad will be soon your favorite one. Cauliflower sliced and chopped, seasoned with nuts, herbs and spices and sprinkled with olive oil. Tomatoes and olives on top, why not. Within no time at all this delicious salad is on the table. What more could you wish for after a stressful day? The Chef’s Handyman team is delighted.
Here we go: chop a medium sized cauliflower and steam briefly with olive oil in a frying pan. Add the olives and diced tomatoes. Flavor with olive oil, salt and pepper. Add spiced nuts. Chop the coriander and parsley and spread over the salad. Sprinkle with lemon. If you like, you can chop an egg and mix it with the salad.

Shopping list for the cauliflower salad for 4 people: 1 medium cauliflower, 1 bunch of coriander, 1 bunch of parsley, 3 eggs (leave it for the vegan version), 4 tomatoes, 20 pitted olives, olive oil, salt, pepper, 0.5 cups of spiced cashews, 1 lemon.
