Cucumber – fresh, cold & spicy
Dog days have finally arrived. During the hot and humid periods, a cold & spicy soup is perfect for lunch, also in the office. The soup is easily prepared and even cold great in taste. Filled in a bottle, the lunch is convenient to carry and can be stored in the office fridge. A sip of cold soup instead of a hot and heavy meal is very refreshing, right? The Chef’s Handyman team is also addicted to cold and spicy soups.
Cold & spicy cucumber soup
To make the soup, peel and cut 2 cucumbers into cubs. Add 2 cups of plain yogurt or soy yogurt, 1 cup of vegetable stock, 1 tsp. of salt, black pepper and 1 tsp. of chili flakes. Blend all ingredients. Season the soup to taste with salt and black pepper. Bottle the soup and store in the fridge. Serve the soup in bowls, garnish with herbs and sprinkle with olive oil.
Shopping list for the cold and spicy cucumber soup for 4 serves: 2 cucumbers, 2 cups plain yogurt or soy yogurt, 1 cup vegetable stock, salt, black pepper, chili flakes, herbs or sprouts, olive oil.
