Cold Soups

Cool and refreshing sips!

Why not enhancing the hot summer days with cold soups? Also during the winter season cold soups will warm the heart and the soul. There are so many combinations around. What about a cold strawberry or a watermelon soup? Served spicy or more on the fresh side with herbs and hot stuff like chili! Melon and mango with a dash of Eastern, spiced with curry and black cumin seeds or beet root soup with plums and ginger both variations will delight your guests. All tested soups are great appetizers. The Chef’s Handyman team had a hard time to favorite a selection of recipes. Here we go! Have a try! Bon appetite!

Irene’s watermelon soup with twist

Watermelon Soup

Chef’s Handyman, Watermelon Soup

To make watermelon soup, cut the watermelon in slices and take the seeds out. Then cut the slices into cubes and blend them.  Season the soup with Tabasco spice, salt and black pepper. Garnish with chili and cilantro. Serve the soup very cold in cups or bowls.

Shopping list for the watermelon soup for 4 serves, 1 small watermelon, 1-3 tsp. tabasco, black pepper, salt, 1 bunch cilantro, 4 chili.

Mango melon soup with curry

Mango Melon Soup with Curry

Chef’s Handyman, Mango Melon Soup with Curry

To make soup, cut the mangoes and the melon into cubes. Place them in a large jar. Add 1 tsp. of curry paste and 1 tbsp. of olive oil. Blend all ingredients. Season the soup to taste with salt and black pepper. Serve the soup in glasses or cups. Garnish with cilantro, sesame seeds and black cumin.

Shopping list for the mango melon soup with curry for 4 serves, 2 mangoes, 1 melon, 1 tbsp. curry paste, black cumin, 4 tbsp. roasted sesame seeds, 1 bunch cilantro, olive oil, salt, black pepper.

Beetroot soup with ginger

Beetroot Soup

Chef’s Handyman Beetroot soup

To make the beetroot soup, cook beets until soft, cut them into pieces. To prepare the plum compote, cut plums in half and remove stone. Add dried plums. Season the compote to taste with, cinnamon, sugar and Jamaica pepper. Cook on low heat until the plums are soft. Then remove from heat. Cool the compote. When cooled, add the beet pieces and grated ginger. Blend all ingredients. Season the soup to taste with salt, black pepper and thyme.

Shopping list for the beetroot soup for 4 serves, 3 cooked beets, 10 plums, 10 dried plums without stones, 1 tbsp. sugar, 1 dash of cinnamon, 1 piece fresh ginger, 1 bunch thyme, salt, black pepper, Jamaica pepper.

Chef’s Handyman tip: Store the soups one hour in fridge before you intent to serve.
