Chef’s Handyman, American Apple Pie

The American apple pie is one of my favorites. Apple pieces combined with cinnamon, nutmeg and cardamom, sounds like winter, but fits into this turbulent time. When the scent of apples and cinnamon wafts through the kitchen, and beguiles with the Piz Palü herbal tea, lazing around is the order of the day. Armed with tea, cake and a good book and Sunday can start. 

American Apple Pie

Ingredients for the American Apple Pie

For the dough 

  • 220 g cold butter
  • 450 g flour (W 480, universal or smooth; Germany: Type 405)
  • 3/4 teaspoon salt (3 g)
  • 2 tablespoons sugar
  • 9-10 tablespoons ice water
  • 1 egg (spread)

For the filling 

  • 1 kg apples or pears of your choice
  • Lemon grated
  • 100 g granulated sugar
  • 2 tablespoons corn starch
  • 1 tablespoon ground cinnamon
  • 1 pinch ground nutmeg or cardamom

Let the dough rest in the refrigerator. Take out and cut into 2 pieces. Roll out one piece, spread the tin (diameter 22 cm) with butter and place the dough in the mould. Press the rim.

Peel the apples and cut them into pieces. Dust with corn starch, cinnamon, cardamom or nutmeg and sugar. Add lemon grated butter. Pour into the mould. 

Roll out the second piece of dough. Place it over the apples and press the rim. Spread with egg yolk and stick it all around with a fork. Bake in the preheated oven at 200°C for about 45 minutes. Take out and let cool down. Serve lukewarm. Goes well with vanilla ice cream.
