Chef’s Handyman Apples

This season there are plenty of apples on the trees. The apple trees do overbid themselves. It’s my first season I have seen so many apples everywhere. Apple pies are loved by children as well as by adults. Why not prepare a delicious pie for the late Sunday coffee break? Have a seat as well. This year the texture of the apples is just great and the flavor so fruity. The Chef’s Handyman team was surprised and impressed as well.

Apple pie with coconut flour

I prefer this type of pie only as a vegetarian version. Unfortunately, you will find no vegan recipe.

Directions for the dough, combine 5 eggs, 2 tbsp. vanilla extract and 140 g or 5 oz. of sugar. Beat until light. Add 100 g or 3.5 oz. of liquid butter, 0.5 cups plain yogurt and a dash of salt. Combine 150 g or 5.5 oz. of flour, 50 g or 1.7 oz of coconut flour, 1 tsp. cinnamon and 1 tbsp. of baking powder. Add the flour to the egg mixture. Combine well and knead with a dough hook. Apply butter on a 9.5-inch spring form. Pour the dough into the form.

Peel 3-4 apples and cut into thin slices. Place the slices into the dough. Garnish with grated pumpkin seeds. Sprinkle with cinnamon and sugar. Bake the pie in the preheated oven at 190°C or 374°F for 55-60 minutes or until golden. Take the pie out and apply apricot or berry jam on top. Cool the pie on a wire rack.

Shopping list for 1 apple pie with coconut flour: 5 eggs, 2 tbsp. vanilla extract, 150 g or 5.5 oz flour, 100 g or 3.5 oz. liquid butter, 150 g or 5.5 oz. sugar, 1 dash salt, 50 g or 1.7 oz. coconut flour, 2 tsp. cinnamon, 1 tbsp. baking powder, 0.5 cups plain yogurt, 3-4 middle sized apples, 6 tbsp. roasted and grated pumpkin seeds, 4.5 tbsp. apricot or berry jam.
