Vitamin packed – colorful winter fruits

No other fruits than citrus fruits do have these wide spectrum of colors. The fragrances of the variety are diversified. It’s a real pleasure to combine several colors. The bitterness of the kumquats has met the sweet taste of chocolate. What a great combination! The salad made a huge party with the citrus fruits. And the dates are now best friends with the oranges. What a spectacle! The Chef’s Handyman team loves all of them, but favorites the spicy citrus fruit salad.

Chocolate Mousse with Citrus Fruits

Chef’s Handyman, Chocolate Mousse with Citrus Fruits

To make mousse, melt chocolate by using the double-boiler method. Whip 2 cups of soy milk with 1 tbsp. of vanilla sugar. Leave some spoons aside for decoration. Fold in the melted chocolate. Fillet 4 oranges. Sprinkle the slices with orange and lemon juice. Add 2 tbsp. of rose blossom water. Place the slices in bowls. Add the chocolate mousse on top. Decorate with roughly grated chocolate slivers, vanilla soy cream and slices of kumquats. Allow the chocolate mousse to cool in the fridge.

Spicy Citrus Fruits Salad

Chef’s Handyman, Spicy Citrus Fruit Salad

Chop the green salad. Fillet 4 oranges, 1 grapefruit and 1 tangerine. Place the salad on plates. Add citrus fruit slices. Decorate with nuts, sprouts and herbs.

To make dressing, combine 8 tbsp. of olive oil, 3 tbsp. lemon juice, 5 tbsp. orange juice, 2 tbsp. apple vinegar, salt, black pepper, 1 tsp. mustard, garden herbs, 1 tsp. of agave syrup. Sprinkle the dressing over the salad.

Sweet Orange Salad

Chef’s Handyman, Sweet Orange Salad

To make orange salad, peel 12 oranges and cut them into thin slices. Place the slices into a bowl. Sprinkle them with 4 tbsp. of rose blossom water, 8 tbsp. of orange juice, 1 tbsp. of lemon juice and 1 tbsp. of agave syrup. Spice with a dash of cardamom powder. Toss slightly. Cut 10 dates into small pieces. Allow the salad to cool in fridge for 1 hour.

Serve the salad in bowls or glasses. Decorate the oranges with 1 tbsp. of dried rosebuds, pistachios, date pieces and chopped peppermint leaves.
