Quinces, a sweet breeze in a hard core

Quince trees are pretty, preparing the fruits, is hard work. Nevertheless quinces charm the dishes and the sweet taste is dizzying. Served as cream or arranged in curries, will delight the guests. What about quinces and plantains included in an exotic flavor infused curry? Why not! A welcome dessert and an eye candy is the layered quince cream. The Chef’s Handyman team favorites the curry with quinces and plantains.

Chef’s Handyman, Curry with Quinces and Plantains

To make the curry, peel 2-3 quinces. Take out the core and cut the rest into slices. Place the slices into a pan. Add 1 cup of water, lemon juice, 2 laurel leaves and 2 tbsp. agave syrup. Cook the quinces with closed lid on medium heat for 10 – 15 minutes or until cooked through. Meanwhile peel the plantains and cut them into slices. Roast them with olive oil in a non-sticking frying-pan for 1 minute. Quench with vegetable stock and 2 cups of coconut milk. Add 2-3 tbsp. of curry paste and grated ginger. Simmer on low heat for some minutes. Add tomato, bel pepper cubes and quinces.  Season the curry to taste with salt and black pepper.  Simmer on low heat until the rice can be served.

Steam the rice or cook in the rice cooker.

Serve the curry with rice. Garnish with lemon rind, peppermint and cilantro.

Shopping list for the curry with quinces and plantains for4 serves: 300 g or 10 oz. basmati rice, 2-3 quinces, 4 plantains, 2 bel pepper, 15 cherry tomatoes, 2 cups coconut milk, curry paste, agave syrup, 2 lemons, 2 dl vegetable stock, salt, black pepper, olive oil, 1 bunch cilantro, 1 bunch peppermint, laurel leaves

To make the layered quince dessert, peel the quinces and cut the plums in half. Add 2 cups of water, 5 tbsp. sugar, 1 tsp. of cinnamon and 1 tsp. of cardamom powder. Simmer on low heat 15-20 minutes or until cooked through. Sieve the fruits and blend them. Strain the mixture. Cool the puree. When cooled place on half in a bowl. Add whipped vanilla soy cream. Leave some cream aside for the decoration. Place both mixtures in glasses by layers. Allow the dessert to cool in fridge for one hour. Before you intent to serve garnish with whipped soy cream and chocolate slivers.
