Papaya Salad with Blackberreis

Green papaya salads, refreshing, spicy and exotic

Green papayas are not available everywhere. More common are the fruity and sweet ones. From my point of view, I love the green papaya fruits, especially when they are processed into a refreshing salad.  Both variations mentioned below are great for the picnic basket. The Chef’s Handyman team couldn’t favorite one of them. Both are really delicious.

Green papaya salad with blackberries

For the papaya salad with blackberries, peel the papaya and cut into wafer thin-slices. Sprinkle with 8 tbsp. of lemon juice and 6 tbsp. of fennel infused oil. Season the salad to taste with black pepper and salt. Add lemon rind and cranberries. Leave for 10 minutes. Season the salad to taste for a second time. Make sure the salad will be spicy but not over spiced. Garnish with edible flower, basil, blackberries and peppermint.

Shopping list for the papaya salad with blackberries for 4 serves: 1 green papaya, 4 lemons, salt, black pepper, 1 cup blackberries, basil, 1 bunch peppermint, 12 edible flowers, 4 tbsp. cranberries, 5 tbsp. fennel oil.

Chef’s Handyman Spicy Green Papaya Salad

For the spicy green papaya salad, combine 1 cup of shredded green papaya, 1 cup of shredded carrots, 1 bunch of shredded garden radish, 10 dried apricots, 0.5 tsp. of chili flakes, 1 piece of grated ginger, 10 tbsp. of lemon juice, 4 tbsp. of olive oil, 1 tbsp. of mustard, 1 tsp. of brown sugar, 10 peppermint leaves, 10 oregano leaves, 0.5 tsp. of salt, 1 dash of black pepper, 0.5 tsp. of Jamaica pepper powder, 1 tsp. of lemon rind, 0.5 cup of rocket salad. Add one avocado in slices on top. Garnish with sprouts and pomegranate seeds.
