Asparagus salad with flowers enchant the guests. At the moment family members are happy, because we are dining with the family during the Corona time and unfortunately we cannot invite guests to this. But virtually everybody can sit with us at the table. Also this year it is a challenge for the farmers to prick asparagus, because the pickers are missing. Nevertheless I try to cook as many recipes as possible this season, because I love asparagus and I am always happy when the season is just around the corner. Asparagus salad with flowers

For the dressing, mix 8 tablespoons of olive oil, 4 tablespoons of vinegar, peppermint, parsley, salad herb mix, herbs and mustard. Season to taste with salt and pepper.

Preparation for 4 serves

Dice sweet potatoes, drizzle with olive oil and season with salt and pepper. Roast in the oven at 200°C for 30 minutes. Take out and let cool down.

Cook asparagus in a steamer until they are soft. If there is no steamer, cook them in salt-sugar water until they are soft. 

Arrange lettuce on plates. Halve the berries. Cut cucumber into pieces. Add asparagus and sweet potatoes and garnish with flowers and herbs. Drizzle the salad with the dressing. 

Serve immediately. Homemade bread goes very well with it.
