Some of them are good for soups others can be used for dessert or cakes. We have bought some small versions and have stuffed them with spicy rice and vegetables. Spicy stuffed pumpkins

Hollow out 4 small pumpkins. Apply olive oil. Place the pieces into an oven-save tin. Roast the squashes in the oven for 30 minutes at 200°C or 400°F.

Meanwhile cook 200 g or 7 oz. of rice in the rice cooker, the steamer or in the pan as written on the wrapping. Heat olive oil in a non-sticking frying pan. Add chili flakes, ras el honout, salt and turmeric powder. Simmer on low heat. Chop 1 onion, 1 sweet pepper and 2 tomatoes. Simmer for some minutes. Then add the rice, 1 can of chick peas and 1 can of sweet corn. Combine all ingredients. Add chopped pumpkin seeds, pistachios, parsley and cilantro.

Stuff the pumpkin with the spicy rice. Serve the squash with salad and yogurt, for the vegan version with soy yogurt.

Shopping list for the stuffed pumpkins: 4 small squashes, 10 tbsp. olive oil, 200 g or 7 oz. rice, 1 tsp. chili flakes, 4 tbsp. ras-el-hanout, salt, pepper, 1 tsp. turmeric powder, 1 onion, 1 sweet pepper, 2 tomatoes, 1 can chick peas, 1 can sweet corn, 5 tsp. pumpkin seeds, 2 tbsp. pistachios, 1 bunch parsley, 1 bunch cilantro.
