Spicy Bedouin bread. If it is not possible to travel so far, let’s bring wanderlust to our plates. Bedouin bread is perfect for a trip to foreign cultures. The spices like cumin or even cardamom add a wonderful exotic scent to the kitchen while baking. The Chef’s Handyman team is blown away. The flatbreads are going well. Already a second portion is in the oven.

Spicy Bedouin Bread

Shopping list for a Spicy Bedouin Bread (makes about 5-6 pieces)

  • 500 g white flour or spelt flour
  • 1 p liquid yeast or 1 p dry yeast
  • 3 tbsp Ras El Hanout
  • 3-4 crushed cardamom pods
  • 1-1.5 tsp cumin, crushed
  • one tbsp salt
  • a pinch sugar
  • 1-2 tbsp fennel seeds
  • 2.5 dl water
  • 4-5 tbsp olive oil

Here we go

Put all ingredients in a bowl and knead well with the dough hook for about 5 minutes. The dough should be smooth. If it is too dry, add 2-3 tablespoons of water.  

Cover the bowl with a tea towel and let the dough rise in the oven at 35°C for 1.5 hours. Take out the dough and form it into a roll. Cut it into 5-6 pieces. Then shape the pieces into patties and place them on a baking sheet covered with baking parchment. Let rise again for 30-40 minutes. Preheat the oven to about 220°C and bake the patties for 10-12 minutes. Take them out and let them cool down.
