Chef’s Handyman, French Toast

A wonderful dish from grandmother’s recipe box. This dessert can be conjured up on the table from stale bread. After an extensive breakfast at the weekend there is always leftover bread.  French toast is a popular dessert, which I already enjoyed as a child with my grandparents and I still like it today.

French Toast

For the compote, put the cranberries in a pan. Add some lemon juice and lemon grated, 1 tsp. vanilla paste, 4 tbsp. preserving sugar, 0.5 dl water, a pinch of salt and a star anise seed. Bring to the boil briefly and simmer for 5 minutes at low heat. When the first berries burst, remove the pan from the heat and let it cool down. 

Combine 2 eggs, 1 dl soy milk or milk, 1 tsp vanilla paste, 1 tbsp sugar, cinnamon and a pinch of salt. Turn the slices of bread in it. Melt butter in a coated pan. Fry the slices of bread in it until golden. Take them out and put them on plates. Add the lukewarm compote. Garnish with peppermint leaves. Serve immediately and enjoy. 

Shopping list for 4 people, 8 slices of stale bread, 1 lemon, 2-3 eggs, butter, 2 dl soy milk, salt, 4 tbsp. preserving sugar, 500 g fresh cranberries, 1 bunch of peppermint, 2 tsp. vanilla paste, 1 tbsp. sugar, cinnamon, 1 star aniseed.
