Chayote – vegetable with a face

How cute, veggies with a face! When I saw them the first time, I could not resist. Have you ever seen such cuddly vegetables? Chayote is originally native to Mesoamerica.  Chayote is an edible plant belonging to the gourd family. The taste is something in between cucumber and kohlrabi. I prefer the cooked preparation than the raw one. Therefore I have started to test with only one dish. The start was great and the team liked the taste of the chayote very much. The Chef’s Handyman team wants to share the delicious chayote salad recipe.

To make salad, wash the chayote vegetables and cut them into small cubes. Heat coconut oil in a non-sticking frying-pan. Simmer the cubes on medium heat for some minutes or until cooked through. Remove from heat. Season the cubes to taste with salt and black pepper.

Place the chayote cubes, edamame and pomegranate seeds into a bowl. Add chopped arugula and herbs.

To make dressing, combine, 6 tbsp. of olive oil, 3 tbsp. of apple vinegar, salt, black pepper, garden herbs, 1 tsp. of mustard, 1 tsp. of agave syrup, lemon zest and 1 tsp. of lemon juice. Pour the dressing over the salad and toss slightly.

Place the salad on plates. Garnish with sprouts, roughly grated hot Asia aperitif nuts and herbs.

Shopping list for the chayote salad for 4 serves: 2 chayote, beet sprouts, mugwort, chervil, Asia aperitif nuts, 1 pomegranate, 1 lemon, salt, black pepper, coconut oil, olive oil, 3 tbsp. apple vinegar, arugula, 1 cup edamame, 1 tsp. mustard, 1 tsp. agave syrup
