Delicious & easy – chocolate nuts, cappuccino kisses, lemon bites

The snow falls softly over the trees. What a surprise this weekend! The winter came just in time, while I intend to bake some cookies for Sunday’s tea and coffee break. I love recipes, which can be prepared within no time, with a handful ingredients and the flavor of Christmas. The Chef’s Handyman team favorites the lemon bites and is happy to share more great baking recipes. What is your favorite one?

Chocolate nut cookies with dried apricots

Chocolate Nut Cookies

Chef’s Handyman, Chocolate Nut Cookies

To make dough, combine 2 tbsp. of chia milk (soak 2 tbsp. of chia seeds in soy or almond milk), 60 g or 2 oz. of raw cane sugar, 60 g or 2 oz. of sugar, 200 g plant based margarine (cold), 6 tbsp. chocolate powder and 1 tbsp. of vanilla sugar. Mix until light. Add 4 tbsp. of dried apricot pieces and roughly chopped caramelized almonds. Add 1 tbsp. of baking powder and 250 g or 8 oz. of flour. Knead with the dough hook.

Prepare baking sheet with parchment paper. Form rounds with the dough and place them on the baking sheet. Bake in oven at 180°C or 350°F for 12-15 minutes. Take them out and cool on wire rack.

To make topping, combine 8 tbsp. of powdered sugar, 1 tbsp. vanilla paste and 2 tbsp. of water. Apply the topping. Decorate with chopped caramelized almonds.

Mix until light. Add 3-4 lemon marmalade. Add 1 tbsp. of baking powder and 250 g or 8 oz. of flour. Knead with the dough hook.

Prepare baking sheet with parchment paper. Form rounds with the dough and place them on the baking sheet. Bake in oven at 180°C or 350°F for 12-15 minutes. Take them out and cool on wire rack.

To make topping, combine 8 tbsp. of powdered sugar, 0.5 tbsp. vanilla paste and 2 tbsp. of lemon juice. Apply the topping. Decorate with decorating sugar.

Mix until light. Add 2 tbsp. of coffee, 1 tsp. of gingerbread spices and 120 g or 4 oz. of chestnut purée. Add 1 tbsp. of baking powder and 250 g or 8 oz. of flour. Knead with the dough hook.

Prepare baking sheet with parchment paper. Form rounds with the dough and place them on the baking sheet. Bake in oven at 180°C or 350°F for 12-15 minutes. Take them out and cool on wire rack.

To make topping, combine 8 tbsp. of powdered sugar, 0.5 tbsp. vanilla paste and 2 tbsp. of cold coffee. Apply the topping. Decorate with chocolate slivers.
