Pasta Curry

Peas puff themselves up! Before they can be prepared they have to be peeled. Afterwards only a small cup of green pearls will be left. Are they making a great fuss about nothing? Not at all! Peas taste wonderful and charm many dishes. Get inspired of new recipes from the Chef’s Handyman kitchen.

To make pasta curry (4 serves), peel 1 kg or 2 lb. of peas. Cut 8 carrots and 2 yellow beetroots into cubes. Prepare 200 g or 7 oz. of sugar peas. Steam the vegetables or cook each in salt water until soft.  Alternative, oven roasted vegetables can be used as well. If so, sprinkle the vegetables with olive oil, salt and black pepper and roast them in oven for 15 minutes at 220°C or until cooked through.  Cook 500 g or 1 lb. of pasta in salt water until al dente. Meanwhile simmer on medium heat 5 dl or 2 cups of coconut milk with 4 tbsp. of curry paste. Add the cooked vegetables. Simmer on low heat for another 5 minutes. Drain pasta and sprinkle with olive oil. Place the pasta in bowls. Serve with the curry vegetables.

Chef’s Handyman Salad with peas and vegetables

To make salad with peas and vegetables, (4 serves) cut 1 cauliflower and 1 broccoli into pieces. Cut spring carrots in half. Prepare beans. Cook the vegetables in salt water or steam them. Place the veggies on plates. Add garden radish. To make dressing, combine 6 tbsp. of olive oil, 2 tbsp. of raspberry vinegar, 1 tsp. of agave syrup, 1 bunch chopped chives, 6 peppermint leaves and 1 tsp. sweet mustard. Sprinkle the salad with the dressing. Garnish with edible flowers.

Pea Soup

Chef’s Handyman pea soup

To make pea soup, (4 serves) bring 4 cups of vegetable stock to the boil. Add 2 cups of peas. Leave some peas for decoration aside. Add 1 tbsp. of match tea powder, 4 cooked potatoes in pieces and 5 tbsp. of soy cream. Mix the soup with a hand-blender. Season the soup to taste with salt and black pepper. Pour the pea soup in bowls. Garnish with peppermint leaves and peas. The soup is great as lunch for the office.

Chef’s Handyman tip: The curry has been served with corn-based pasta. Standard pasta may be served as well.
