Spaghetti with nut basil pesto
The ingredients for the pasta dough might be different for all the brands of pasta makers. Therefore read carefully the instructions. Then the pasta will be perfect.
For the vegan pesto, combine 400 g rough shredded walnuts, 2 bunch of fresh basil, 1 garlic glove, a piece of chili, 2 tbsp of olive oil, 3-4 tbsp of lukewarm water, a dash of salt and black pepper. Blend all ingredients with a blender. The result should be like a spread.
For the vegetarian version, add in addition 3 tbsp of grated parmesan cheese.
Cook the spaghetti in hot salt water for some minutes. Fresh pasta need only a few minutes to be al dente. Place the pasta on plates, top with the pesto and garnish with chives and grated garden radish.
Shopping list for the spaghetti with walnut basil pesto for 4 serves, for the pesto, 400 g rough shredded walnuts, 2 bunch of fresh basil, 1 garlic glove, chili, 2 tbsp of olive oil, 3-4 tbsp lukewarm water, salt and black pepper, 1 bunch garden radish, parmesan, a bunch chives, for the dough, 600 g macaroni wheat, 300 g flour, 3 dl water, 2 dashes salt, 1 tbsp olive oil.
