Tomato Melon Salad
To make the salad, cut the tomatoes and the melon into pieces. Add chopped peppermint, basil and cress. Sprinkle the ingredients with olive oil, lemon juice and white balsamic vinegar. Season the salad with black pepper and salt. Cut the bread slices into cubes. Roast the cubes in a non-sticking-frying pan. Place the bread cubes on top of the fruits.
Serve the salad in bowls or on plates.
Shopping list for the tomato melon salad for 4 serves: 1 quarter melon, 10-15 different kinds of tomatoes, 3 slices bread, 1 lemon, white balsamic vinegar, 1 bunch peppermint leaves, 1 bunch basil, 1 cup cress, salt and black pepper.
