Sweet strawberry bites for the coffee break

April was doing what he wanted! The weather was changing from snow over rain to sun within minutes, also during the nights. So, the soil was freezing as well. That was very bad for the spoiled strawberries. Unfortunately, they couldn’t be wrapped into warm coats over the nights. Strawberries are the beauties among the fruits. They don’t like freezing breezes; they need the sun. Without mild and warm shafts of sunlight, they won’t grow. The sun is the master over the bright, red and sweet skin. I love the dark red fruit with a small floral, green hut on the top. Strawberries are my favorites. Which fruits do you prefer?

To make the vegan dough, combine 300 g or 11 oz. of flour, 200 g or 7 oz. of plant based margarine, 5 tbsp. of sugar, 2 tbsp. of vanilla sugar, 3 tbsp. of water, 1 tsp. of baking powder, 1 dash of salt, 1 portion egg replacement and a dash of lemon rind. Knead well. Wrap the dough into foil. Store in fridge for one hour.

To make the filling, cut strawberries into cubes. Add lemon juice, lemon rind and 4 tbsp. of preserving sugar. Cook on medium heat for 5-10 minutes. Remove from heat and cool the filling.

Prepare small baking forms with parchment paper or apply margarine on top. Roll the dough out and cut out some rounds. Place the round into the baking cups. Add the filling. Cut some stripes and place them on top of the filling.

Bake the cakes in oven at 180°C or 350°F for 20-25 minutes. When baked through take them out and cool the cakes on the wire rack. When cooled dust them with powdered sugar.

Chef’s Handyman tip: For a fast result, ready pie crust and dough can be used as well.

Shopping list for the strawberry bites, makes about 8-10 pieces: 300 g or 11 oz. flour, 200 g or 7 oz. plant based margarine, 5 tbsp. sugar, 2 tbsp. vanilla sugar, 3 tbsp. water, 1 tsp. baking powder, 1 dash salt, 1 portion egg replacement, 1 lemon, 5 tbsp. preserving sugar, 250 – 400 g or 9-14 oz. strawberries.
