Red vegetables, great show on plates

Red is my favorite color! Red vegetables need to getting used as dish, right! Doubters might change their mind, when they see the colorful plates. Bright colors are in many cases tastier than the pale ones.

Wrap, roast, unwrap and ready to serve!

The Chef’s Handyman team loves all of them. No favorite this time. Three great recipes with red veggies to share! All three dishes are smashing. Please have a try.

Oven roasted beet salad

To make the salad, wrap each beet into a parchment paper. Add thyme. Bake in oven at 180°C or 350°F for about 45 minutes. Meanwhile cut the zucchini in pieces. Heat coconut oil in a non-sticking frying-pan. Add the zucchini. Close the pan with the lid. Simmer for 2-3 minutes. Remove the lid. Sprinkle the zucchini with apple vinegar and 3 tbsp. of olive oil. Remove the pan from the heat. Add some anise seeds. Season the zucchini with salt and black pepper.

Remove the wrapping from the beets and place them on plates. Add the zucchini. Cut 1-2 apples in cubes. Garnish the beets with apples, zucchini and pomegranate seeds. Sprinkle with olive oil and lemon juice. Spice with salt and black pepper.

Shopping list for the oven roasted beet salad for 4 serves: 8 small beets, 1-2 zucchini, 1 lemon, 1-2 apples, 1 pomegranate, 8 tbsp. olive oil, 2-3 tbsp. apple vinegar, salt, black pepper, 1 tsp. anise seeds, sprouts, 1 bunch thyme, 1 tbsp. coconut oil.

To make the eggplants, wrap each eggplant into a parchment paper. Add thyme. Bake in oven at 180°C or 350°F for about 30 minutes. When finished unwrap the eggplants and place them on preheated plates.

Meanwhile cook the couscous as written on the box. When finished, place the couscous into huge bowl and cool it. Sprinkle with olive oil and lemon juice. Add 3 tbsp. of couscous spice. Season the salad to taste with salt, chili powder and black pepper. Add grated ginger, lemon rind and chopped peppermint leaves. Cut 10 dried apricots into slices and the cucumber into cubes. Combine all ingredients. Add roughly chopped hot aperitif nuts on top.

To make vegan friendly topping, blend 120 g or 4 oz. silk bean curd and 4 tbsp. soy cream. Season the mixture to taste with salt, black pepper and lemon juice. Add chopped peppermint leaves. For the vegetarian version, use plain yogurt.

Cut the soft eggplant in half. Add Couscous and the topping. Garnish with lemon rind, pomegranate seeds and peppermint leaves.

Shopping list for the filled eggplants for 4 serves: 4-6 eggplants, 4 lemons, 10 tbsp. olive oil, 1 cucumber, 10 dried apricots, 1 pomegranate, 50 g or 2 oz. of hot aperitif nuts, 200 g or 7 oz. couscous, 100 g or 3.5 oz. silk bean curd, 4 tbsp. soy cream, chili powder, salt, black pepper, 1 piece fresh ginger, 1 bunch peppermint, 1 bunch thyme, for the vegetarian version, 1 cup plain yogurt.

Red onion pasta

To make pasta, cook the macaroni in salt water until soft. Drain the pasta.

Meanwhile cut 8 red onions in slices. Heat coconut oil in a non-sticking frying-pan. Add the onions. Quench with 0.5 cups of red wine. Cook on high heat for 5 minutes. Reduce heat. Add blueberries and 1 tbsp. of bitter orange. Season the mixture to taste with salt and black pepper.

Steam the cauliflower or cut in pieces and blanch them in salt water until soft. Place the macaroni in preheated bowls. Add the onion mixture. Garnish with cauliflower and roughly chopped aperitif nuts.

Shopping list for the red pasta for 4 serves: 500 g or 16 oz. macaroni, 8-10 red onions, 150 g or 5 oz. blueberries, 0.5 cups red wine, salt, black pepper, 1 medium sized cauliflower, olive oil, 50 g or 1.5 oz. roughly chopped hot aperitif nuts.
